Ingredients:

-1 pound ripe tomatoes

-½ cup diced onion

-1 jalapeño pepper, seeded and diced

-2 cloves garlic, minced

-¼ cup chopped fresh cilantro

-1 tablespoon lime juice

-1 teaspoon ground cumin

-1 teaspoon chili powder

-½ teaspoon salt

Directions:

1. Begin by blanching the tomatoes in a pot of boiling water for about 1 minute, or until the skin starts to peel off. Remove the tomatoes from the water and place them in a bowl of ice water to cool. Once cool, peel off the skin and discard.

2. Chop the tomatoes into small pieces and place them in a blender or food processor. Add the onion, jalapeno pepper, garlic, cilantro, lime juice, cumin, chili powder, and salt. Blend until the mixture is smooth and well combined.

3. Transfer the salsa to a serving dish and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled or at room temperature with tortilla chips or as a topping for tacos and other Mexican dishes. Enjoy!

1. Cut the avocados in half and remove the pits. Scoop the avocado flesh into a medium bowl and mash it with a fork or potato masher until it reaches your desired consistency.

2. Stir in the onion, jalapeño pepper, garlic, cilantro, lime juice, cumin, and salt. Mix until well combined.

3. Taste and adjust the seasoning as needed. Serve immediately, or cover and refrigerate until ready to serve. Enjoy with tortilla chips or as a topping for tacos, burritos, and other Mexican dishes.
